Description

A delicious and healthy salad featuring chewy pasta, fresh spinach, sweet cranberries, creamy feta, and crunchy nuts.


Ingredients

  • 8 oz (225g) pasta
  • 3 cups fresh baby spinach
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup (30g) chopped walnuts or pecans
  • 1/4 small red onion
  • 3 tbsp extra virgin olive oil

Instructions

  1. Cook the pasta according to package instructions, then drain and let cool.
  2. In a large bowl, combine the cooked pasta, fresh baby spinach, dried cranberries, crumbled feta cheese, chopped walnuts or pecans, and thinly sliced red onion.
  3. Drizzle with olive oil and toss to combine.
  4. Season with salt and pepper to taste.
  5. Serve chilled or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving again.
