Ingredients

- 8 oz (225g) pasta
- 3 cups fresh baby spinach
- 1/2 cup dried cranberries
- 1/2 cup crumbled feta cheese
- 1/4 cup (30g) chopped walnuts or pecans
- 1/4 small red onion
- 3 tbsp extra virgin olive oil
Instructions
- Cook the pasta according to package instructions, then drain and let cool.
- In a large bowl, combine the cooked pasta, fresh baby spinach, dried cranberries, crumbled feta cheese, chopped walnuts or pecans, and thinly sliced red onion.
- Drizzle with olive oil and toss to combine.
- Season with salt and pepper to taste.
- Serve chilled or at room temperature.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving again.
