- 8 oz orzo pasta
- 1 tablespoon olive oil
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups baby spinach
Instructions
- Cook the orzo pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté until they are golden brown.
- Add the minced garlic to the skillet and sauté for another minute until fragrant.
- Stir in the baby spinach and cook until wilted.
- Add the cooked orzo to the skillet and toss everything together. Season with salt and pepper to taste.
- Serve warm and enjoy!
