Description

Ingredients

  • 8 oz orzo pasta
  • 1 tablespoon olive oil
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 4 cups baby spinach

Instructions

  1. Cook the orzo pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté until they are golden brown.
  3. Add the minced garlic to the skillet and sauté for another minute until fragrant.
  4. Stir in the baby spinach and cook until wilted.
  5. Add the cooked orzo to the skillet and toss everything together. Season with salt and pepper to taste.
  6. Serve warm and enjoy!
