Ingredients

  • 1 lb (16 oz) potato gnocchi
  • 1 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 3 garlic cloves, minced
  • 5 oz fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced mushrooms and cook until they’re golden brown, about 5-7 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the fresh spinach and cook until wilted.
  5. Add the heavy cream and bring to a simmer, cooking for a few minutes until slightly thickened.
  6. Meanwhile, cook the potato gnocchi in boiling salted water according to package instructions.
  7. Drain the gnocchi and add them to the skillet with the sauce.
  8. Toss everything together, then sprinkle with grated Parmesan cheese before serving.

Notes

For added flavor, serve with extra Parmesan and black pepper. Pairs well with a simple green salad or crusty bread.
