Ingredients

- 1/4 cup Greek yogurt
- 1 1/2 cups chopped baby spinach
- 1 tbsp chopped dill
- 1 cup feta cheese, crumbled
- 1 cup all-purpose flour
- 1 tsp baking powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the egg, olive oil, and Greek yogurt until well combined.
- Stir in the chopped spinach, dill, and feta cheese.
- In another bowl, whisk together flour, baking powder, salt, and pepper.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
- Let cool slightly before serving.
Notes
Squeeze excess moisture from spinach to avoid soggy cookies. For extra flavor, consider adding garlic powder or onion powder.
