Ingredients

  • 4 tbsp olive oil (or melted butter)
  • 1/4 cup Greek yogurt
  • 1 1/2 cups chopped baby spinach
  • 1 tbsp chopped dill
  • 1 cup feta cheese, crumbled
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the egg, olive oil, and Greek yogurt until well combined.
  3. Stir in the chopped spinach, dill, and feta cheese.
  4. In another bowl, whisk together flour, baking powder, salt, and pepper.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes or until golden brown.
  8. Let cool slightly before serving.

Notes

Squeeze excess moisture from spinach to avoid soggy cookies. For extra flavor, consider adding garlic powder or onion powder.
