Description
A delicious twist on the classic grilled cheese sandwich combining feta cheese, fresh spinach, and gooey mozzarella between crispy sourdough bread.
Ingredients

- 4 slices sourdough or artisan sandwich bread
- 1 tablespoon olive oil
- 2 cups fresh spinach, chopped
- 1 garlic clove, minced
- 1/2 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons unsalted butter (softened)
- Pinch of salt & black pepper
Instructions
- Heat olive oil in a skillet over medium heat. Add minced garlic and cook for about 30 seconds.
- Add chopped spinach and cook until wilted, about 2–3 minutes. Season with salt and pepper. Let cool slightly.
- Butter one side of each bread slice. On the unbuttered side, layer mozzarella, sautéed spinach, crumbled feta, and more mozzarella. Top with another slice of bread, buttered side out.
- Heat a nonstick pan over medium heat. Grill each sandwich for 3–4 minutes on each side until golden brown and the cheese is melted.
- Slice sandwiches in half and serve warm.
Notes
For added flavor, serve with a sprinkle of extra feta. Store leftovers in an airtight container in the fridge for up to 2 days.
