Spinach and Feta Grilled Cheese

Description

A delicious twist on the classic grilled cheese sandwich combining feta cheese, fresh spinach, and gooey mozzarella between crispy sourdough bread.


Ingredients

  • 4 slices sourdough or artisan sandwich bread
  • 1 tablespoon olive oil
  • 2 cups fresh spinach, chopped
  • 1 garlic clove, minced
  • 1/2 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter (softened)
  • Pinch of salt & black pepper

Instructions

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and cook for about 30 seconds.
  2. Add chopped spinach and cook until wilted, about 2–3 minutes. Season with salt and pepper. Let cool slightly.
  3. Butter one side of each bread slice. On the unbuttered side, layer mozzarella, sautéed spinach, crumbled feta, and more mozzarella. Top with another slice of bread, buttered side out.
  4. Heat a nonstick pan over medium heat. Grill each sandwich for 3–4 minutes on each side until golden brown and the cheese is melted.
  5. Slice sandwiches in half and serve warm.

Notes

For added flavor, serve with a sprinkle of extra feta. Store leftovers in an airtight container in the fridge for up to 2 days.
