Spinach and Cheese Stuffed Portobello Mushrooms

Description

Delicious and healthy Portobello mushrooms filled with spinach, gooey cheese, and spices, perfect for appetizers or main courses.


Ingredients

  • 4 large Portobello mushrooms, stems removed and gills scraped out
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar (optional)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup fresh spinach, chopped
  • 1 cup cheese (mozzarella or feta recommended)
  • 1/4 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, heat 1 tbsp of olive oil over medium heat.
  3. Add chopped spinach and sauté until wilted.
  4. In a bowl, combine sautéed spinach, cheese, breadcrumbs, salt, and pepper. Mix well.
  5. Brush the Portobello mushrooms with olive oil and balsamic vinegar.
  6. Stuff the mixture into the Portobello mushrooms.
  7. Place stuffed mushrooms on a baking sheet and bake for 20-25 minutes or until cheese is melted and mushrooms are tender.
  8. Serve warm.

Notes

Experiment with different types of cheese or add other vegetables for variety. Can be stored in the refrigerator for up to 2-3 days.
