- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- 2 cups cooked rice
- 1 avocado, diced
- 1 cup mango salsa
- 1 lime, juiced
- 1 tsp chili flakes (for drizzle)
Instructions
- In a bowl, mix olive oil, smoked paprika, ground cumin, and chili powder. Add shrimp and coat well.
- Heat a skillet over medium heat and cook the shrimp for 2-3 minutes on each side until fully cooked.
- To make the lime-chili drizzle, combine lime juice and chili flakes in a small bowl.
- In serving bowls, layer cooked rice, shrimp, diced avocado, and mango salsa.
- Drizzle with lime-chili mixture before serving.
