- 2 spicy sausage links
- 2 large eggs
- 1 avocado, sliced
- 1 cup spinach
- 1/2 cup cherry tomatoes, halved
- Salt and pepper to taste
- Olive oil
Instructions
- In a skillet, heat a small amount of olive oil over medium heat. Cook the spicy sausage links until browned and cooked through, about 5-7 minutes. Remove and slice.
- In the same skillet, crack the eggs and cook them sunny-side up or to your liking. Season with salt and pepper.
- Add the spinach and cherry tomatoes to the skillet, stirring until the spinach is wilted and the tomatoes are warm.
- On a plate, arrange the sliced sausage, eggs, avocado, spinach, and tomatoes. Serve immediately.
Notes
Use a non-stick skillet for easier cooking and cleanup. For extra heat, add hot sauce or red pepper flakes.
