Ingredients

  • 2 salmon fillets
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp garlic (minced)
  • 1/2 cup cooked white rice (per bowl)
  • 1/4 cup sliced cucumbers
  • 2 tbsp spicy mayo (mix sriracha with mayo)
  • 2 tbsp chopped green onions
  • Optional: sesame seeds or pickled ginger

Instructions

  1. In a bowl, mix soy sauce, honey, sesame oil, and minced garlic. Marinate the salmon fillets in this mixture for 15–20 minutes.
  2. Heat a skillet over medium-high heat. Cook the marinated salmon for 3–4 minutes on each side until it is caramelized and cooked through.
  3. In a bowl, add the cooked white rice. Top it with the seared salmon, cucumber slices, and chopped green onions.
  4. Add a generous drizzle of spicy mayo over the top. If you like, sprinkle some sesame seeds.
  5. Enjoy your Spicy Salmon Rice Bowl warm with chopsticks or a spoon!

Notes

Make sure not to overcook the salmon. Adjust the spiciness of the mayo to suit your taste. Use brown rice for a healthier option.
