A vibrant and flavorful stir-fry bringing a kick of heat with tender chicken and colorful vegetables.
Ingredients

- 1 lb boneless chicken breast or thighs, cut into bite-sized pieces
- 1 tbsp vegetable oil
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1–2 jalapeños, sliced
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp sriracha (adjust to taste)
- 1 tsp brown sugar
- 1 tsp cornstarch + 2 tbsp water (optional, for thickening)
- Chopped cilantro & sesame seeds, for garnish
Instructions
- Heat oil in a skillet over medium-high heat. Cook the chicken pieces until golden brown and cooked through. Remove the chicken and set it aside.
- In the same pan, add the chopped red and yellow bell peppers, sliced jalapeños, and minced garlic. Cook for about 3–4 minutes until the veggies start to soften.
- In a bowl, mix together the soy sauce, hoisin sauce, sriracha, and brown sugar. Pour this sauce over the vegetables in the pan along with the cooked chicken.
- If you like a thicker sauce, mix the cornstarch with water and stir this slurry into the pan. Simmer until the sauce thickens and coats everything well.
- Top the dish with chopped cilantro and sesame seeds. Serve hot with rice or noodles.
Notes
Feel free to add more veggies like broccoli, snap peas, or carrots to increase the nutrition and fiber. You can substitute the chicken with shrimp, beef, or tofu.
