Description

A simple, nutritious meal packed with flavor, combining lean ground turkey with fresh veggies served over fluffy white rice.


Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 cup mushrooms, chopped
  • 1 bell pepper (red or orange), chopped
  • 1/2 zucchini, sliced
  • 1/2 yellow squash, sliced
  • 1/2 cup broccoli florets
  • 2 cups cooked white rice
  • 2 tbsp low-sodium soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt & pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add ground turkey and cook until browned and crumbly.
  2. Toss in the diced onion and chopped mushrooms. Cook until they are soft.
  3. Stir in the low-sodium soy sauce, garlic powder, and crushed red pepper flakes (if using). Mix well.
  4. In another pan or on a hot grill pan, sear the chopped bell peppers, zucchini, yellow squash, and broccoli until lightly charred.
  5. To serve, layer cooked white rice at the bottom of a bowl. Add the seasoned ground turkey on top, then finish with the grilled veggies.
  6. Drizzle a bit more soy sauce or a spicy chili sauce if desired. You can also garnish with green onions or sesame seeds for an extra touch.

Notes

Use lean ground turkey for a lighter option, or substitute with ground chicken or beef if preferred. For added crunch, sprinkle some nuts or seeds on top.
