A delicious and refreshing salad combining grilled chicken, rice noodles, and fresh vegetables with a zesty dressing.
Ingredients

- 1 grilled chicken breast, sliced
- 4 oz rice noodles, cooked & cooled
- 1 cup shredded carrots
- 1/2 cup chopped cucumber
- 1/4 cup chopped peanuts
- 1–2 red chilies, thinly sliced
- Fresh cilantro
- 2 tbsp lime juice
- 1 tbsp fish sauce or soy sauce
- 1 tsp chili oil or sriracha
- 1 tsp honey
- 1 garlic clove, minced
Instructions
- Whisk all vinaigrette ingredients together.
- Toss the noodles, vegetables, and herbs in a bowl.
- Add the grilled chicken and drizzle with the dressing.
- Top with peanuts and sliced chilies. Serve chilled or at room temperature!
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep dressing separate to avoid soggy noodles.
