Description

A delicious and refreshing salad combining grilled chicken, rice noodles, and fresh vegetables with a zesty dressing.


Ingredients

  • 1 grilled chicken breast, sliced
  • 4 oz rice noodles, cooked & cooled
  • 1 cup shredded carrots
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped peanuts
  • 12 red chilies, thinly sliced
  • Fresh cilantro
  • 2 tbsp lime juice
  • 1 tbsp fish sauce or soy sauce
  • 1 tsp chili oil or sriracha
  • 1 tsp honey
  • 1 garlic clove, minced

Instructions

  1. Whisk all vinaigrette ingredients together.
  2. Toss the noodles, vegetables, and herbs in a bowl.
  3. Add the grilled chicken and drizzle with the dressing.
  4. Top with peanuts and sliced chilies. Serve chilled or at room temperature!

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep dressing separate to avoid soggy noodles.
