A delicious meal featuring marinated chicken, crispy potatoes, and creamy hot honey whipped feta.

- 2 boneless chicken breasts
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- Pinch of red pepper flakes
- 1 lb baby potatoes, halved if large
- 1 tsp dried thyme or rosemary
- 4 oz feta cheese
- 1/4 cup Greek yogurt
- 1 tbsp honey
- 1/2 tsp chili flakes or hot sauce
- Fresh chopped parsley (for garnish)
Instructions
- Combine chicken with olive oil, lemon juice, garlic, oregano, smoked paprika, red pepper flakes, salt, and pepper. Let it marinate for at least 30 minutes.
- Toss the baby potatoes with olive oil, thyme (or rosemary), salt, and pepper. Roast them at 425°F (220°C) for 25-30 minutes until they are golden and crispy.
- Grill or pan-sear the marinated chicken until it is charred and fully cooked (aim for 165°F or 74°C). Let it rest before slicing.
- In a blender, mix feta cheese, Greek yogurt, and a splash of olive oil until smooth and creamy.
- Warm the honey gently and stir in chili flakes (or your favorite hot sauce) before drizzling it over the whipped feta.
- Plate sliced chicken next to the crispy potatoes, add a dollop of whipped feta, drizzle with hot honey, and finish with fresh parsley.
Notes
Marinate the chicken longer for a deeper flavor. Use different herbs for the whipped feta to switch up the taste.
