Ingredients

  • 2 large chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Greek spices (e.g., oregano, thyme, paprika)
  • 4 medium potatoes
  • 2 tbsp garlic, minced
  • 2 tbsp parmesan cheese
  • 1/2 cup feta cheese
  • 12 tbsp hot honey
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a bowl, mix olive oil, lemon juice, Greek spices, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Meanwhile, peel and cube the potatoes. Boil in salted water until tender, then drain.
  5. Toss the potatoes with garlic, parmesan cheese, salt, and pepper, and roast them in the oven at 400°F for 20-25 minutes until golden and crispy.
  6. Grill the marinated chicken for 6-7 minutes on each side until fully cooked.
  7. For the whipped feta, blend feta cheese with hot honey until creamy.
  8. Serve the grilled chicken on a plate, drizzled with whipped feta, alongside the crispy garlic parmesan potatoes.
