- 2 boneless skinless chicken breasts
- 2 cups sweet potatoes, peeled & diced
- 2 cups kale, chopped
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp crushed red pepper flakes
- 2 cloves garlic, minced
- Salt & black pepper to taste
- Optional: a splash of apple cider vinegar for the kale
Instructions
- Mix smoked paprika, garlic powder, onion powder, salt, and pepper. Rub this spice mixture all over the chicken breasts with a bit of olive oil.
- In a hot skillet, sear the chicken for 4–5 minutes per side until beautifully browned and fully cooked.
- Toss the diced sweet potatoes in olive oil, salt, pepper, and red pepper flakes. Roast them in a 400°F oven for 20–25 minutes until crispy on the edges.
- In a pan with butter and minced garlic, sauté the kale for 3–4 minutes until tender. Add a splash of apple cider vinegar if desired.
- Plate the dish by stacking the chicken on the bottom, followed by the roasted sweet potatoes and the sautéed kale on the side.
Notes
Feel free to adjust the spices to your taste. For a vegetarian version, substitute chicken with tofu or tempeh.
