Delicious and easy appetizer combining spicy sausage, creamy cheese, and heat from Rotel tomatoes.

- 1 lb spicy breakfast sausage (uncooked)
- 1 cup shredded cheddar cheese
- 8 oz cream cheese, softened
- 1 (10 oz) can Rotel (drained well)
- 1 1/4 cups Bisquick baking mix
- Chopped parsley (for garnish)
- Extra cheese for topping (optional)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the spicy sausage, cheddar cheese, softened cream cheese, drained Rotel, and Bisquick. Mix until everything is fully combined.
- Roll the mixture into 1.5-inch balls and place them on the prepared baking sheet.
- Bake for 20–25 minutes, until they are golden brown and cooked through.
- Optional: Top with more melted cheese and a sprinkle of parsley. Serve warm!
Notes
These sausage balls are best served warm with dipping sauces like ranch or hot sauce. Store leftovers in an airtight container for 3-4 days or freeze for up to 2 months.
