- 1/2 cup cooked white rice
- 1/2 grilled chicken breast, sliced
- 1/2 zucchini, sliced
- 1/3 cup cherry tomatoes
- 1/4 cup red onion, chopped
- 1/4 red bell pepper, chopped
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/4 tsp chili powder
- Salt & pepper to taste
- Optional: garlic powder or lemon juice
Instructions
- Coat the chicken in olive oil, paprika, chili powder, salt, and pepper. Grill or pan-sear until golden and juicy.
- Sear zucchini slices on high heat until lightly charred.
- Toss cherry tomatoes, onions, and bell pepper in olive oil. Sauté until tender and blistered.
- Prepare white rice until soft and fluffy.
- Assemble the bowl by arranging rice, veggies, and chicken. Drizzle with olive oil or lemon juice if desired.
Notes
Tailor the spices to your taste. For a vegetarian option, swap chicken for grilled tofu or chickpeas.
