Ingredients

  • 1/2 cup cooked white rice
  • 1/2 grilled chicken breast, sliced
  • 1/2 zucchini, sliced
  • 1/3 cup cherry tomatoes
  • 1/4 cup red onion, chopped
  • 1/4 red bell pepper, chopped
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/4 tsp chili powder
  • Salt & pepper to taste
  • Optional: garlic powder or lemon juice

Instructions

  1. Coat the chicken in olive oil, paprika, chili powder, salt, and pepper. Grill or pan-sear until golden and juicy.
  2. Sear zucchini slices on high heat until lightly charred.
  3. Toss cherry tomatoes, onions, and bell pepper in olive oil. Sauté until tender and blistered.
  4. Prepare white rice until soft and fluffy.
  5. Assemble the bowl by arranging rice, veggies, and chicken. Drizzle with olive oil or lemon juice if desired.

Notes

Tailor the spices to your taste. For a vegetarian option, swap chicken for grilled tofu or chickpeas.
