- 1 chicken breast, diced
- 1/2 cup white rice, cooked
- 1/2 cup broccoli florets
- 1/2 zucchini, sliced
- 1/2 cup carrots, sliced
- 1 tbsp olive oil (divided for veggies & chicken)
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp chili powder (optional for heat)
- Salt & black pepper, to taste
Instructions
- Toss the diced chicken in olive oil, paprika, garlic powder, chili powder, salt, and pepper. Sear it in a hot pan until the chicken is golden and juicy.
- In the same or another pan, cook the zucchini, broccoli, and carrots with a little olive oil until they are lightly browned and tender-crisp.
- Serve your rice hot and fluffy; it is perfect for soaking up the spicy juices from the chicken.
- Lay down the cooked rice on a plate, then add the spicy chicken and all the veggies on the side.
- For extra flavor, add a squeeze of lemon or a sprinkle of chili flakes if desired.
Notes
Make sure your pan is hot before adding the chicken to get a nice sear. Feel free to add or swap vegetables based on preference. Adjust the chili powder based on your spice tolerance.
