A quick and delicious Spicy Chicken Stir-Fry with flavorful chicken, crispy vegetables, and golden fries served over fluffy rice.
Ingredients

- 2 chicken breasts, diced
- 1 tbsp vegetable oil
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp chili flakes
- Salt and black pepper to taste
- 1 cup basmati or jasmine rice
- 2 cups water
- Pinch of salt
- 2 large potatoes, peeled and cut into thick fries
- Oil for deep frying or air frying
- Salt to taste
Instructions
- In a hot skillet, cook diced chicken in oil with garlic until lightly browned. Add bell peppers and onions and sauté until slightly softened.
- Stir in soy sauce, oyster sauce, chili flakes, and a dash of black pepper. Simmer until the sauce coats everything beautifully.
- Rinse the rice, then boil with water and a pinch of salt. Simmer on low, covered, until the water is absorbed.
- Fry potato slices until golden and crispy. Sprinkle with salt while hot.
- Plate a mound of fluffy rice, a generous spoon of stir-fry, and a side of fries.
Notes
Make sure your skillet is hot before adding the chicken to enhance searing. Adjust spice level by modifying chili flakes.
