Description

A quick and delicious Spicy Chicken Stir-Fry with flavorful chicken, crispy vegetables, and golden fries served over fluffy rice.


Ingredients

  • 2 chicken breasts, diced
  • 1 tbsp vegetable oil
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp chili flakes
  • Salt and black pepper to taste
  • 1 cup basmati or jasmine rice
  • 2 cups water
  • Pinch of salt
  • 2 large potatoes, peeled and cut into thick fries
  • Oil for deep frying or air frying
  • Salt to taste

Instructions

  1. In a hot skillet, cook diced chicken in oil with garlic until lightly browned. Add bell peppers and onions and sauté until slightly softened.
  2. Stir in soy sauce, oyster sauce, chili flakes, and a dash of black pepper. Simmer until the sauce coats everything beautifully.
  3. Rinse the rice, then boil with water and a pinch of salt. Simmer on low, covered, until the water is absorbed.
  4. Fry potato slices until golden and crispy. Sprinkle with salt while hot.
  5. Plate a mound of fluffy rice, a generous spoon of stir-fry, and a side of fries.

Notes

Make sure your skillet is hot before adding the chicken to enhance searing. Adjust spice level by modifying chili flakes.
