- 1/2 cup cooked white rice
- 1/2 cup grilled or teriyaki chicken, sliced
- 1/4 avocado, sliced
- 1/4 cup cucumber, thinly sliced
- 1 tbsp spicy mayo or sriracha mayo
- Chopped chives or green onion
- Salt, pepper, and seasoning to taste
Instructions
- Cook the white rice and fluff it until light and fluffy.
- Use grilled or teriyaki-marinated chicken, slice it, and drizzle with spicy mayo.
- Thinly slice the cucumber and avocado.
- In a bowl, layer the rice, chicken, cucumbers, and avocado.
- Add spicy mayo, chopped chives, and salt and pepper to taste.
Notes
Store components separately in airtight containers. Rice and chicken can last in the fridge for up to 3 days. Add lemon juice to avocado slices to prevent browning.
