Description

A delicious and satisfying meal featuring seasoned chicken, fluffy rice, creamy avocado, and crunchy cucumber, all drizzled with a spicy mayo.


Ingredients

  • 1/2 cup cooked white rice
  • 1/2 cup grilled or teriyaki chicken, sliced
  • 1/4 avocado, sliced
  • 1/4 cup cucumber, thinly sliced
  • 1 tbsp spicy mayo or sriracha mayo
  • Chopped chives or green onion
  • Salt, pepper, and seasoning to taste

Instructions

  1. Cook the white rice and fluff it until light and fluffy.
  2. Use grilled or teriyaki-marinated chicken, slice it, and drizzle with spicy mayo.
  3. Thinly slice the cucumber and avocado.
  4. In a bowl, layer the rice, chicken, cucumbers, and avocado.
  5. Add spicy mayo, chopped chives, and salt and pepper to taste.

Notes

Store components separately in airtight containers. Rice and chicken can last in the fridge for up to 3 days. Add lemon juice to avocado slices to prevent browning.
