  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tbsp chopped fresh parsley, for garnish
  • 1 lb linguine pasta
  • 4 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup reserved pasta water
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh basil, for garnish

Instructions

  1. Cook the linguine in salted boiling water until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.
  2. Pat the chicken breasts dry and season both sides with Cajun seasoning.
  3. Heat olive oil and butter in a skillet over medium-high heat. Cook the chicken for 5–7 minutes on each side until golden brown and cooked through. Remove from skillet and let it rest.
  4. Lower the heat to medium, add chicken broth and heavy cream to the skillet, scraping any browned bits from the bottom. Simmer for 3–4 minutes until the sauce thickens slightly, then remove from heat.
  5. In a separate pan, melt the butter over medium heat. Sauté the garlic for 1 minute until fragrant.
  6. Stir in the heavy cream and bring to a gentle simmer. Mix in the Parmesan cheese until smooth, then season with salt and pepper.
  7. Toss the linguine in the Parmesan sauce, adding reserved pasta water as needed to reach desired consistency.
  8. Slice the chicken and serve it over the pasta. Garnish with parsley, basil, and extra Parmesan.

Notes

Adjust the amount of Cajun seasoning to taste. Reserve pasta water is key for perfect sauce consistency.
