A delicious and healthy option for a meal or snack, packed with protein and flavor, served with cool cucumber yogurt.
Ingredients

- 1 cup dried red lentils
- 2 1/4 cups water
- 1/2 small onion, finely chopped
- 2 garlic cloves, minced
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1/2 cup cucumber, grated
- 1/2 cup yogurt
- 1 tbsp lemon juice
- Fresh herbs for garnish (optional)
Instructions
- Rinse the lentils under cold water and drain. In a pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer until tender, about 15-20 minutes. Drain excess water.
- In a skillet, cook the onion and garlic in a bit of oil until soft.
- In a bowl, mash the lentils and mix in the cooked onion, garlic, cumin, paprika, salt, and pepper. Form into patties.
- Heat oil in a skillet over medium heat. Cook the patties until golden brown on both sides, about 3-5 minutes each.
- For the cucumber yogurt, combine grated cucumber, yogurt, lemon juice, salt, and pepper in a bowl.
- Serve warm with cucumber yogurt and garnish with fresh herbs if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave.
