Description

A delicious and healthy option for a meal or snack, packed with protein and flavor, served with cool cucumber yogurt.


Ingredients

  • 1 cup dried red lentils
  • 2 1/4 cups water
  • 1/2 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1/2 cup cucumber, grated
  • 1/2 cup yogurt
  • 1 tbsp lemon juice
  • Fresh herbs for garnish (optional)

Instructions

  1. Rinse the lentils under cold water and drain. In a pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer until tender, about 15-20 minutes. Drain excess water.
  2. In a skillet, cook the onion and garlic in a bit of oil until soft.
  3. In a bowl, mash the lentils and mix in the cooked onion, garlic, cumin, paprika, salt, and pepper. Form into patties.
  4. Heat oil in a skillet over medium heat. Cook the patties until golden brown on both sides, about 3-5 minutes each.
  5. For the cucumber yogurt, combine grated cucumber, yogurt, lemon juice, salt, and pepper in a bowl.
  6. Serve warm with cucumber yogurt and garnish with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave.
