Description
Delicious and nutritious spiced lentil patties served with a refreshing cucumber yogurt.
Ingredients

- 1 cup dried red lentils
- 2 1/4 cups water
- 1/2 small onion, finely chopped
- 2 garlic cloves, minced
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh cilantro or parsley, chopped
- 1/2 cucumber, grated
- 1 cup yogurt
- 1 tbsp lemon juice
Instructions
- Rinse the lentils under cold water and combine them with the water in a pot. Bring to a boil and simmer for 15-20 minutes until soft. Drain and let cool.
- In a mixing bowl, mash the lentils and mix in the chopped onion, minced garlic, cumin, smoked paprika, salt, pepper, and cilantro or parsley.
- Form the mixture into small patties.
- Heat a non-stick skillet over medium heat and cook the patties for about 4-5 minutes on each side until golden brown.
- For the cucumber yogurt, mix the grated cucumber with the yogurt and lemon juice in a bowl.
- Serve the lentil patties with the cucumber yogurt on the side.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Uncooked patties can be frozen for a month.
