Spiced Lentil Patties with Cucumber Yogurt

Description

Delicious and nutritious spiced lentil patties served with a refreshing cucumber yogurt.


Ingredients

  • 1 cup dried red lentils
  • 2 1/4 cups water
  • 1/2 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1/2 cucumber, grated
  • 1 cup yogurt
  • 1 tbsp lemon juice

Instructions

  1. Rinse the lentils under cold water and combine them with the water in a pot. Bring to a boil and simmer for 15-20 minutes until soft. Drain and let cool.
  2. In a mixing bowl, mash the lentils and mix in the chopped onion, minced garlic, cumin, smoked paprika, salt, pepper, and cilantro or parsley.
  3. Form the mixture into small patties.
  4. Heat a non-stick skillet over medium heat and cook the patties for about 4-5 minutes on each side until golden brown.
  5. For the cucumber yogurt, mix the grated cucumber with the yogurt and lemon juice in a bowl.
  6. Serve the lentil patties with the cucumber yogurt on the side.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Uncooked patties can be frozen for a month.
