Ingredients

- 2 Chicken breast
- 2 tbsp Olive oil
- 1 tsp Paprika
- 1 tsp Garlic powder
- 1 tsp Salt
- 1/2 tsp Pepper
- 4 cups Mixed salad greens
- 1 cup Cherry tomatoes, halved
- 1 Cucumber, diced
- 1 cup Yogurt
- 2 tbsp Lemon juice
- Fresh herbs (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, paprika, garlic powder, salt, and pepper.
- Coat the chicken strips in the spice mixture and place them on a baking sheet.
- Bake for 20-25 minutes until cooked through.
- While the chicken is baking, prepare the salad by tossing salad greens, cherry tomatoes, and cucumber in a large bowl.
- In a separate bowl, mix yogurt and lemon juice to create the sauce.
- Serve the chicken strips on top of the salad and drizzle with yogurt sauce.
- Garnish with fresh herbs if desired.
Notes
Let the chicken marinate in the spice mixture for more flavor. Use Greek yogurt for a thicker sauce if desired.
