A delicious and healthy meal combining tender chicken, fresh veggies, and a creamy yogurt sauce.


Ingredients

  • 2 Chicken breast
  • 2 tbsp Olive oil
  • 1 tsp Paprika
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 4 cups Mixed salad greens
  • 1 cup Cherry tomatoes, halved
  • 1 Cucumber, diced
  • 1 cup Yogurt
  • 2 tbsp Lemon juice
  • Fresh herbs (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, paprika, garlic powder, salt, and pepper.
  3. Coat the chicken strips in the spice mixture and place them on a baking sheet.
  4. Bake for 20-25 minutes until cooked through.
  5. While the chicken is baking, prepare the salad by tossing salad greens, cherry tomatoes, and cucumber in a large bowl.
  6. In a separate bowl, mix yogurt and lemon juice to create the sauce.
  7. Serve the chicken strips on top of the salad and drizzle with yogurt sauce.
  8. Garnish with fresh herbs if desired.

Notes

Let the chicken marinate in the spice mixture for more flavor. Use Greek yogurt for a thicker sauce if desired.
