Instructions
- Season & Cook the Chicken: Coat sliced chicken with olive oil, paprika, garlic powder, salt, and pepper. Grill or pan-fry until golden brown and juicy.
- Roast the Veggies: Toss cherry tomatoes, zucchini, bell pepper, and red onion in olive oil, salt, and pepper. Roast at 425°F for 20–25 minutes until caramelized and tender.
- Cook the Rice: Prepare white rice according to package directions.
- Assemble the Plate: Add a scoop of rice, roasted veggies, and spiced chicken to a bowl or plate.
- Optional Drizzle: Try lemon tahini, tzatziki, or a splash of hot sauce for extra flavor.
