- 1 medium cauliflower, cut into florets
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp turmeric
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the cauliflower florets and chickpeas.
- Drizzle with olive oil and sprinkle cumin, smoked paprika, and turmeric over the mixture.
- Toss until the cauliflower and chickpeas are well-coated.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and lightly browned.
- Serve warm as a side dish or over rice.
Notes
For extra crunch, sprinkle toasted pine nuts or sesame seeds on top before serving. Adjust the spices to taste or add cayenne pepper for heat.
