Description

A vibrant and flavorful dish that brings a taste of the Mediterranean to your table, packed with seafood, spices, and vegetables.


Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 2 cups Arborio rice
  • 4 cups chicken or seafood broth
  • 1 tsp saffron threads
  • 1 lb mixed seafood (shrimp, mussels, squid)
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Heat olive oil in a large paella pan over medium heat.
  2. Add chopped onion, garlic, and red bell pepper, cooking until softened.
  3. Stir in the rice and cook for a couple of minutes until slightly translucent.
  4. Add broth and saffron, bring to a boil, then reduce heat and simmer for about 15 minutes.
  5. Add the seafood and peas, layering them on top of the rice.
  6. Cover and cook until the seafood is cooked through and the rice is tender, about 10 more minutes.
  7. Season with salt and pepper to taste.
  8. Serve with lemon wedges.

Notes

Use fresh seafood for the best flavor and a heavy-bottomed pan for even cooking. Don’t stir the rice once you add the broth to achieve a nice crust.
