Ingredients

  • 4 bell peppers, halved and cored
  • 200g ground beef
  • 1 cup cooked rice
  • 1/2 cup corn
  • 1/2 cup black beans
  • 1 teaspoon cumin
  • 1/2 cup shredded cheese

Instructions

  1. Cook ground beef with cumin in a skillet over medium heat until browned.
  2. Mix the cooked beef with rice, corn, and black beans until well combined.
  3. Fill each halved bell pepper with the beef mixture.
  4. Top each stuffed pepper with shredded cheese.
  5. Bake in a preheated oven at 180°C for 25 minutes until the peppers are tender and the cheese is melted.
