  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/2 cup pineapple juice
  • 1/2 cup orange juice
  • Orange food coloring (optional)
  • Whipped cream for garnish
  • Fresh pineapple slices for garnish
  • Orange slices for garnish
  • Fresh mint leaves for garnish

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press mixture into the bottom of a 9-inch springform pan and bake for 10 minutes, then set aside to cool.
  3. In a large mixing bowl, beat cream cheese and 1 cup of sugar until smooth. Add vanilla extract and mix in eggs one at a time until well blended. Stir in sour cream and flour until fully combined.
  4. Divide cream cheese mixture into two bowls. To one, add pineapple juice; to the other, add orange juice and food coloring. Mix until smooth.
  5. Pour the pineapple mixture into the cooled crust. Spoon the orange mixture on top, then swirl to create a marbled effect.
  6. Bake for 50-60 minutes until the center is set but slightly jiggly. Let cool in the oven for an hour, then refrigerate for at least 4 hours or overnight.
  7. Before serving, top with whipped cream, pineapple slices, orange slices, and mint leaves.

Notes

For best results, use room temperature cream cheese and avoid overmixing. Chill overnight for deeper flavor.
