- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/4 cup all-purpose flour
- 1/2 cup pineapple juice
- 1/2 cup orange juice
- Orange food coloring
- Whipped cream for garnish
- Fresh pineapple slices
- Orange slices
- Fresh mint leaves
Instructions
- Preheat the oven to 325°F (163°C).
- In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press this mixture into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes, then set it aside to cool.
- In a large mixing bowl, beat the cream cheese and 1 cup of sugar until smooth.
- Add the vanilla extract and mix well. Then, add the eggs one at a time, mixing after each addition.
- Stir in the sour cream and flour until the mixture is well blended.
- Divide the cream cheese mixture into two bowls. In one bowl, add the pineapple juice, and in the other, add the orange juice.
- Add a few drops of orange food coloring to the orange juice mixture and stir until well combined.
- Pour the pineapple cream cheese mixture into the cooled crust, followed by the orange cream cheese mixture.
- Use a knife to gently swirl the two mixtures together to create a marbled effect.
- Bake for 50-60 minutes, or until the center is set.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about an hour.
- Refrigerate for at least 4 hours or overnight.
Notes
For extra flavor, serve with a dollop of whipped cream and fresh fruits. Store leftovers in the refrigerator for 3-4 days or freeze for up to a month.
