Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/2 cup pineapple juice
  • 1/2 cup orange juice
  • Orange food coloring
  • Whipped cream for garnish
  • Fresh pineapple slices
  • Orange slices
  • Fresh mint leaves

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press this mixture into the bottom of a 9-inch springform pan.
  3. Bake the crust for 10 minutes, then set it aside to cool.
  4. In a large mixing bowl, beat the cream cheese and 1 cup of sugar until smooth.
  5. Add the vanilla extract and mix well. Then, add the eggs one at a time, mixing after each addition.
  6. Stir in the sour cream and flour until the mixture is well blended.
  7. Divide the cream cheese mixture into two bowls. In one bowl, add the pineapple juice, and in the other, add the orange juice.
  8. Add a few drops of orange food coloring to the orange juice mixture and stir until well combined.
  9. Pour the pineapple cream cheese mixture into the cooled crust, followed by the orange cream cheese mixture.
  10. Use a knife to gently swirl the two mixtures together to create a marbled effect.
  11. Bake for 50-60 minutes, or until the center is set.
  12. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about an hour.
  13. Refrigerate for at least 4 hours or overnight.

Notes

For extra flavor, serve with a dollop of whipped cream and fresh fruits. Store leftovers in the refrigerator for 3-4 days or freeze for up to a month.
