Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a large mixing bowl, combine the flour, sugar, baking soda, and salt.
- Add the eggs, melted butter, vanilla extract, and crushed pineapple (including its juice) and stir until well mixed.
- Gently fold in the chopped pecans.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
- In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar, mixing until fluffy and well combined.
- Stir in the vanilla extract and the drained crushed pineapple (if using).
- Once the cake is completely cool, spread the cream cheese frosting evenly over the top.
- Garnish with additional chopped pecans for a delightful crunch.
Notes
