Delightful bars that combine the warmth of classic cobbler with rich cherry filling and a buttery crust.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup unsalted butter, cold and cubed
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups cherry pie filling
- 1/4 cup almond flour
- 1/4 cup oats
Instructions
- Preheat the oven to 375°F (190°C). Grease and line a 9×13-inch baking dish with parchment paper.
- In a large bowl, mix the flour, granulated sugar, brown sugar, baking powder, salt, and ground cinnamon.
- Cut the cold, cubed butter into the flour mixture until it resembles coarse crumbs.
- In a small bowl, whisk together the egg and vanilla extract, then add to the flour mixture and stir until just combined.
- Press half of the dough mixture into the prepared baking dish to form the base.
- Spread the cherry pie filling evenly over the base layer.
- In a separate bowl, combine the almond flour and oats with the remaining dough mixture.
- Crumble the remaining dough mixture over the cherry filling.
- Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbly.
- Allow the bars to cool completely in the pan before slicing into squares.
Notes
Serve warm or at room temperature, optionally topped with vanilla ice cream. Store in an airtight container at room temperature for up to 3 days.
