Ingredients

  • 1 1/2 teaspoons baking powder

  • 2 large eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat the oven to 175 °C (350 °F). Grease and flour two 9-inch pans.
  2. In a bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract; beat at medium speed until well combined.
  4. Gradually add boiling water to the batter; it will be thin, but that’s fine!
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then remove and cool completely.

Notes

For a richer flavor, consider adding chocolate chips to the batter. Store leftovers in an airtight container for up to three days.
