- 1 cup unsalted butter, room temperature
- 1 cup creamy peanut butter, room temperature
- 2 teaspoons pure vanilla extract
- 1 1/4 cups light brown sugar, packed
- 1/3 cup granulated sugar
- 2 large eggs, room temperature
- 1 large egg yolk, room temperature
- 1 3/4 cups all-purpose flour
- 3/4 cup old-fashioned oats
- 1/2 cup quick oats
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 1/2 cups M&M candies
- 1 1/2 cups semi-sweet chocolate chips
- 1/2 cup salted peanuts, roughly chopped
Instructions
- In a stand mixer, beat the unsalted butter until smooth. Add peanut butter and vanilla extract, mixing until smooth.
- Gradually add brown sugar and granulated sugar, beating until fluffy.
- Incorporate eggs one at a time.
- In a separate bowl, mix flour, oats, baking soda, baking powder, cinnamon, and salt.
- Gradually mix dry ingredients into wet ingredients. Fold in M&M candies, chocolate chips, and peanuts.
- Chill the dough for 30 minutes or up to 2 days.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop mounds of dough onto sheets and flatten slightly. Bake for about 12 minutes until edges are golden brown.
- Let cookies cool on baking sheet for 10 minutes before transferring to a cooling rack.
Notes
Store cookies in an airtight container at room temperature or freeze them for up to three months.
