  • 1/2 cup (120ml) whole milk
  • 1 1/2 cups (150g) almond flour
  • 1/2 cup (60g) all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 4 oz (115g) dark chocolate (70% cocoa or higher), chopped
  • 1/2 cup (120ml) heavy cream
  • 2 tablespoons unsalted butter
  • 1/4 cup (50g) sugar
  • 1 teaspoon vanilla extract
  • Powdered sugar (for dusting)
  • Fresh berries (optional, for serving)
  • A handful of chopped almonds (optional, for garnish)

Instructions

  1. Prepare the chocolate fondant center by melting dark chocolate in heated heavy cream. Stir until smooth, then cool for 5-10 minutes.
  2. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  3. Cream the softened butter and sugar until fluffy, then add eggs one at a time, beating well. Stir in vanilla and almond extracts.
  4. In a separate bowl, combine almond flour, all-purpose flour, baking powder, and salt. Gradually mix this dry mixture into the wet ingredients, alternating with milk until just combined.
  5. Pour half the batter into the prepared pan, add the cooled chocolate fondant in the center, then cover it with the remaining batter.
  6. Bake for 18-20 minutes or until the top is golden. A toothpick should come out clean from the edges, but the center should be gooey.
  7. Cool for 5 minutes before transferring to a wire rack. Dust with powdered sugar and optional garnishes before serving.

Notes

Serve warm or at room temperature with a dollop of whipped cream or fresh berries. Store leftovers in an airtight container for up to two days or in the refrigerator.
