Ingredients
Scale
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup whole milk
- 1 cup heavy cream
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract (for frosting)
- 1/2 cup unsalted butter, softened (for frosting)
- 8 oz cream cheese, softened
- 2 tbsp corn syrup (optional for frosting)
- 1/4 cup white chocolate chips (melted for decoration)
- Snowflake-shaped fondant or edible snowflake decorations
- Icing sugar for dusting (optional)
- Edible glitter (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
- In a medium bowl, sift the flour, baking powder, and salt. Set aside.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the dry ingredients, alternating with the milk, until the batter is smooth and well-combined.
- Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- For the frosting, beat the cream cheese and softened butter together until creamy. Gradually add the powdered sugar and continue beating until smooth. Stir in the vanilla extract and corn syrup.
- In a separate bowl, whip the heavy cream to soft peaks and fold it into the cream cheese mixture until light and fluffy.
- Assemble the cake by placing one layer on a serving plate and spreading frosting on top. Place the second layer on top and frost the entire cake with the remaining frosting.
- For the snowflake decoration, melt the white chocolate chips and drizzle them in the shape of snowflakes onto parchment paper, then let them cool and harden.
- Use edible glitter or a light dusting of icing sugar to finish the cake.
- Slice the Snowflake Cake and enjoy!
