Description

Delicious muffins combining the flavors of chocolate, caramel, and peanut butter, filled with creamy goodness and topped with Snickers chunks.


Ingredients

  • 50 g Snickers bars, cut into small cubes
  • 130 g soft butter
  • 50 g peanut butter
  • 100 g sugar
  • 70 g brown sugar
  • A pinch of salt
  • 2 medium eggs
  • 170 g all-purpose flour (Type 405)
  • 3 tablespoons cocoa powder
  • 2 teaspoons baking powder
  • 50 ml milk (or coffee)
  • 250 g mascarpone
  • 50 g peanut butter
  • 3 tablespoons caramel sauce
  • 150 g cream
  • 1 packet cream stiffener
  • 50 g milk chocolate coating
  • 100 g Snickers bars, for topping
  • A little caramel sauce for garnish

Instructions

  1. Preheat the oven to 180°C (160°C for fan ovens). Line a muffin tin for 12 muffins with paper liners.
  2. Cut the Snickers bars into very small cubes and set aside.
  3. In a bowl, beat the softened butter, peanut butter, sugars, and salt together until creamy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. In another bowl, combine the flour, cocoa powder, and baking powder.
  6. Alternate adding this dry mixture with the milk to the batter, mixing until just combined.
  7. Evenly distribute the batter into the muffin liners with an ice cream scoop or two tablespoons.
  8. Bake in the preheated oven for about 25 minutes.
  9. Allow the muffins to cool after baking.
  10. For the filling, mix the mascarpone, peanut butter, and caramel sauce in a bowl.
  11. Whip the cream with the cream stiffener until stiff, then gently fold it into the mascarpone mixture.
  12. Fill a piping bag with a star tip and pipe the cream onto the cooled muffins.

Notes

Make sure butter is soft before mixing and avoid overmixing for a light texture. Sprinkle crushed peanuts on top before baking for added crunch.
