- 1 teaspoon vanilla extract
- 18 fun-size Snickers bars, coarsely chopped (1–11.8 ounce package)
- 1 cup semisweet chocolate chips (170 grams)
- 1/2 cup heavy cream (for ganache)
- 9 fun-size Snickers bars, coarsely chopped (for topping)
Instructions
- Preheat your oven to 325°F (163°C). In a food processor, finely grind the Oreo cookies until you have fine crumbs. Add the melted butter and pulse until the mixture is moistened. Press the crumb mixture into the bottom and halfway up the sides of a 9-inch springform pan. Bake the crust for 10 minutes, then let it cool on a wire rack.
- In the bowl of an electric mixer, beat the cream cheese until smooth. Add the eggs one at a time, mixing until smooth after each addition. Mix in the brown sugar, heavy cream, and vanilla extract until well combined. Stir in the chopped Snickers bars.
- Pour the cheesecake batter into the cooled crust. Place the springform pan on a rimmed baking pan. Bake for 1 hour to 1 hour 15 minutes, until the cheesecake is set. Cool completely on a wire rack, then refrigerate for at least 6 hours.
- To make the topping, combine the chocolate chips in a bowl, heat the heavy cream until it simmers, then pour over the chips and let sit for 3 minutes before stirring until smooth. Pour ganache over the chilled cheesecake and sprinkle with chopped Snickers bars.
- Serve immediately or store in the refrigerator for up to 2 days.
