Ingredients

  • 2 1⁄2 cups Oreo crumbs
  • 5 tablespoons unsalted butter, melted
  • 24 oz cream cheese, room temperature
  • 3/4 cup white granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1/4 cup heavy cream, room temperature
  • 1 teaspoon pure vanilla extract
  • 3 large eggs, room temperature
  • 3 cups mini Snickers bars, chopped into eighths
  • 1 cup white granulated sugar (for caramel)
  • 4 tablespoons unsalted butter, room temperature (for caramel)
  • 1/2 cup heavy cream, room temperature (for caramel)
  • 1 teaspoon salt (for caramel)
  • 1/2 teaspoon pure vanilla extract (for caramel)
  • Extra Snickers bars, chopped (for decoration)
  • Optional: chopped peanuts and mini chocolate chips

Instructions

  1. Preheat your oven to 325°F (163°C). Spray a 9-inch springform pan with non-stick spray, place a parchment circle at the bottom, and spray again.
  2. Pulse Oreo cookies in a food processor until you have 2 1⁄2 cups of crumbs. Combine Oreo crumbs with melted butter and press into the bottom and half up the sides of the pan. Bake for 12 minutes and let cool.
  3. Chop 3 cups of mini Snickers bars into eighths. In a mixer, beat cream cheese on high until light and fluffy. Add sugar, vanilla, sour cream, and heavy cream, mixing until smooth. Add eggs one at a time on low speed, gently fold in chopped Snickers.
  4. Prepare a water bath and bake for 85-95 minutes until edges are set with a slight jiggle in the center. Turn off the oven and let cheesecake sit for 30 minutes, then cool on a rack before chilling for 6 hours or overnight.
  5. For the salted caramel, heat sugar in a saucepan over medium heat until melted and amber-colored. Remove from heat, add butter while whisking, then gradually add heavy cream, whisking continuously. Add salt and vanilla extract. Cool caramel in a glass jar at room temperature.
  6. Pour cooled salted caramel over the cheesecake and sprinkle with extra Snickers, peanuts, and mini chocolate chips if desired.
  7. Refrigerate the cheesecake until ready to serve. Slice into wedges and enjoy!
