Description

A delightful twist on two classic desserts, combining snickerdoodle cookies with cream cheese and apple pie filling.


Ingredients

  • 1 (1 lb 1.5 oz) pouch Snickerdoodle Cookie Mix
  • 1/2 cup butter, softened
  • 1 (8 oz) package cream cheese, softened
  • 1/4 cup sugar
  • 1 tbsp flour
  • 1 tsp vanilla extract
  • 1 egg
  • 1 1/4 cups apple pie filling, chopped
  • 1/2 tsp cinnamon
  • 1 tbsp butter, melted
  • Remaining snickerdoodle cookie crumbs from crust

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch glass pie plate.
  2. In a large bowl, mix the snickerdoodle cookie mix with butter until it forms crumbs. Press 2 cups of the crumbs into the bottom and up the sides of the pie plate. Bake for 10 minutes and set aside to cool.
  3. Mix the remaining snickerdoodle crumbs with 1 tablespoon melted butter and toss to combine.
  4. Beat the cream cheese until smooth, then add sugar, flour, vanilla, and egg and beat until smooth.
  5. In a small bowl, mix the apple pie filling with 1/2 teaspoon cinnamon and stir to combine.
  6. Spread the cream cheese mixture evenly over the cookie crust, then spoon the chopped apple pie filling on top. Sprinkle the crumble topping over the apples.
  7. Bake for 35 minutes or until the topping is golden brown. Let cool completely, then refrigerate for at least 3 hours before serving.

Notes

Serve chilled or at room temperature; excellent with whipped cream or vanilla ice cream.
