S’mores Cupcakes

Description

Delightful cupcakes that replicate the classic campfire s’mores with chocolate, marshmallow frosting, and crunchy graham crackers.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/2 cup brown sugar, firmly packed
  • 3 tbsp unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup whole milk
  • 6 tbsp unsalted butter, softened (for icing)
  • 2 1/2 cups powdered sugar (for icing)
  • 1/2 cup unsweetened cocoa powder (for icing)
  • 1/3 cup whole milk (for icing)
  • 1 tsp vanilla extract (for icing)
  • Graham crackers (for garnish)
  • Hershey’s chocolate bar (for garnish)
  • Marshmallow sauce (for garnish)
  • Mini chocolate chips (for garnish)
  • Mini marshmallows (for garnish)
  • Chocolate sauce (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with cupcake liners.
  2. Sift together the flour, cocoa powder, baking powder, baking soda, and salt in a large bowl. Set aside.
  3. Cream together the sugar and butter until light and fluffy. Add the eggs one at a time, beating well after each addition, followed by the vanilla extract.
  4. Add half of the dry ingredients and 1/2 cup of milk, mixing until combined. Repeat with remaining dry ingredients and milk.
  5. Fill cupcake liners about 2/3 full and bake for 15-18 minutes until a toothpick comes out clean. Allow to cool in pans for 20 minutes, then transfer to wire racks.
  6. For the icing, cream the butter, add the milk and powdered sugar alternating until mixed well. Add cocoa powder and vanilla, beating until fluffy.
  7. Once the cupcakes are cool, frost each cupcake with icing using a pastry bag.
  8. Garnish with marshmallow sauce, mini chocolate chips, mini marshmallows, graham cracker pieces, and Hershey’s chocolate. Drizzle with chocolate sauce.

Notes

Best enjoyed fresh and can be stored in an airtight container for up to 3 days at room temperature.
