Description

Delightful S’mores Cupcakes with layers of chocolate, creamy marshmallow frosting, and crunchy graham crackers.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/2 cup brown sugar, firmly packed
  • 3 tbsp unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup whole milk
  • 6 tbsp unsalted butter, softened (for icing)
  • 2 1/2 cups powdered sugar (for icing)
  • 1/2 cup unsweetened cocoa powder (for icing)
  • 1/3 cup whole milk (for icing)
  • 1 tsp vanilla extract (for icing)
  • Graham crackers (for garnish)
  • Hershey’s chocolate bar (for garnish)
  • Marshmallow sauce (for garnish)
  • Mini chocolate chips (for garnish)
  • Mini marshmallows (for garnish)
  • Chocolate sauce (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.
  2. Sift together the flour, cocoa powder, baking powder, baking soda, and salt in a large bowl and set aside.
  3. Cream together the sugar and butter until light and fluffy. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Mix half of the dry ingredients and 1/2 cup of milk until combined, then repeat with the remaining dry ingredients and milk.
  5. Fill the cupcake liners about 2/3 full and bake for 15-18 minutes, or until a toothpick comes out clean. Cool in the pans for 20 minutes, then transfer to wire racks to cool completely.
  6. For the icing, cream the butter and gradually add the milk and powdered sugar alternately until mixed well. Add cocoa powder and vanilla, then beat until the frosting is light and fluffy.
  7. Once the cupcakes are cool, frost each one with the icing.
  8. Garnish with marshmallow sauce, mini chocolate chips, mini marshmallows, a piece of graham cracker, a small piece of Hershey’s chocolate, and drizzle with chocolate sauce.

Notes

Make sure to use room temperature eggs for better mixing. Avoid overmixing the batter once you add the dry ingredients. For extra flavor, consider toasting mini marshmallows before garnishing.
