S’mores Cheesecake

Description

A delightful twist on the classic campfire treat, combining the rich flavors of cheesecake with the sweet tastes of s’mores.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 32 ounces cream cheese, room temperature
  • 1 cup granulated sugar
  • 2/3 cup sour cream, room temperature
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 4 large eggs, room temperature
  • 1 cup miniature marshmallows
  • 1/2 cup miniature chocolate chips
  • 1 cup chocolate chips or chopped milk chocolate
  • 3/4 cup heavy cream
  • Additional jumbo marshmallows, for toasting

Instructions

  1. Preheat the oven to 350°F (175°C). In a food processor, finely crush the graham crackers, then combine with the melted butter and sugar. Press this mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
  2. Reduce the oven temperature to 325°F (163°C).
  3. In a mixer, beat the cream cheese and sugar until smooth. Add in the sour cream, vanilla, and salt. Gradually add the eggs one by one, mixing well after each addition. Fold in the miniature marshmallows and chocolate chips.
  4. Prepare the springform pan with aluminum foil to catch any drips, and pour the cheesecake batter into the crust.
  5. Bake the cheesecake in a water bath at 325°F for about 70 minutes. Once done, cool it in the oven for 30 minutes, then let it cool at room temperature.
  6. Refrigerate the cheesecake for at least 4 hours to set.
  7. For the ganache, microwave the chocolate chips and heavy cream until smooth, then pour this over the chilled cheesecake.
  8. Toast additional jumbo marshmallows on top and drizzle with any leftover ganache. Chill the cheesecake for another 30 minutes before serving.

Notes

Use room temperature ingredients for a smoother batter. Do not skip the water bath; it helps prevent cracks in the cheesecake.
