S’mores Cheesecake

Description

A delightful dessert that combines the classic taste of s’mores with the creamy richness of cheesecake. Topped with chocolate ganache and toasted marshmallows.


Ingredients

  • 1 1/2 cups finely crushed graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 32 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 2/3 cup sour cream, at room temperature
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 4 large eggs, at room temperature
  • 1 cup mini marshmallows
  • 1/2 cup mini chocolate chips
  • 1 cup chocolate chips or chopped milk chocolate
  • 3/4 cup heavy cream
  • Jumbo marshmallows (for toasting)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until fully coated. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then set aside to cool.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add the sugar and mix well. Add the sour cream, vanilla, and salt, and mix until everything is smooth. Add the eggs one at a time, mixing after each addition. Gently fold in the mini marshmallows and chocolate chips. Pour this mixture over the cooled crust and bake for 60-70 minutes until it is set but jiggles slightly in the middle. Cool completely, then refrigerate for at least 4 hours.
  4. Heat the heavy cream in a small saucepan until it just starts to simmer. Pour it over the chocolate chips in a bowl and whisk until smooth. Let it cool slightly, then pour it over the chilled cheesecake.
  5. Arrange the jumbo marshmallows on top of the ganache. Use a kitchen torch or broil in the oven to toast them lightly until golden brown.
  6. Slice the S’mores Cheesecake and serve it cold. Enjoy!

Notes

Allow the cream cheese to soften well before starting. Use room temperature eggs for better blending. If you don’t have a kitchen torch, use the broiler but watch carefully to avoid burning the marshmallows.
