A delicious twist on a classic comfort food, this meatloaf combines smoky flavors with spicy jalapeños and a creamy ranch topping.
Ingredients

- 1 1/2 lbs ground beef or turkey
- 1/2 cup breadcrumbs
- 1/2 cup cooked crumbled bacon
- 1 cup shredded cheddar cheese
- 2 jalapeños, diced (seeds removed for less heat)
- 2 eggs
- 1/4 cup milk
- 1 tsp smoked paprika
- Salt & pepper, to taste
- For the Ranch Drizzle:
- 1/2 cup ranch dressing
- 2 tbsp sour cream
- 1 tbsp chopped fresh chives (optional)
Instructions
- In a large bowl, mix the ground meat, breadcrumbs, bacon, cheddar cheese, jalapeños, eggs, milk, smoked paprika, salt, and pepper. Form the mixture into a loaf shape and place it on a baking sheet or in a loaf pan.
- Preheat your oven to 375°F (190°C) and bake the meatloaf for 45–55 minutes or until its internal temperature reaches 160°F.
- While the meatloaf is baking, whisk together ranch dressing, sour cream, and chives in a small bowl.
- Once the meatloaf is done, drizzle the creamy ranch over the warm meatloaf before serving.
- Slice the meatloaf and garnish with extra bacon bits and green onions if desired!
Notes
Adjust the heat by adding more or fewer jalapeños. Pair with sides like mashed potatoes or a fresh salad.
