Ingredients

  • 1 smoked sausage link, sliced into thick rounds
  • 1/2 green bell pepper, sliced
  • 1/4 onion, sliced
  • 1 tsp olive oil or butter
  • Pinch of garlic powder
  • Pinch of black pepper
  • 1 cup fresh green beans, trimmed
  • 1 tsp olive oil
  • Salt and pepper to taste
  • Optional: garlic or a squeeze of lemon
  • 1/2 cup cooked brown rice or flavored rice mix
  • 1 tsp butter or seasoning packet (optional)

Instructions

  1. In a skillet, heat olive oil over medium heat. Add the sausage slices and cook until brown and crispy on the edges. Toss in the bell pepper and onion, cooking until tender.
  2. In a separate pan, sauté or steam green beans with a little olive oil and a pinch of salt until bright green and slightly tender.
  3. Cook brown rice or a seasoned rice packet according to package instructions and fluff with butter if desired.
  4. Plate the sausage and pepper mixture, add the green beans, and serve with rice.
  5. Optional: Add a dash of hot sauce or sprinkle of cheese on top before serving.

Notes

Feel free to use different types of sausage for variety. For a spicier kick, add jalapeños or red pepper flakes. You can also add zucchini or mushrooms for extra nutrition.
