- 1/2 green bell pepper, sliced

- Pinch of black pepper
- 1 cup fresh green beans, trimmed
- 1 tsp olive oil
- Salt and pepper to taste
- Optional: garlic or a squeeze of lemon
- 1/2 cup cooked brown rice or flavored rice mix
- 1 tsp butter or seasoning packet (optional)
Instructions
- In a skillet, heat olive oil over medium heat. Add the sausage slices and cook until brown and crispy on the edges. Toss in the bell pepper and onion, cooking until tender.
- In a separate pan, sauté or steam green beans with a little olive oil and a pinch of salt until bright green and slightly tender.
- Cook brown rice or a seasoned rice packet according to package instructions and fluff with butter if desired.
- Plate the sausage and pepper mixture, add the green beans, and serve with rice.
- Optional: Add a dash of hot sauce or sprinkle of cheese on top before serving.
Notes
Feel free to use different types of sausage for variety. For a spicier kick, add jalapeños or red pepper flakes. You can also add zucchini or mushrooms for extra nutrition.
