A fun twist on traditional meals, combining savory smash burgers and fluffy pancakes for breakfast, lunch, or dinner.


Ingredients

  • 1 lb ground beef (80/20 ratio for juiciness)
  • Salt and pepper to taste
  • 4 slices cheddar cheese
  • 4 small slider-sized hamburger buns (optional)
  • Optional toppings: pickles, lettuce, ketchup, mustard
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1 cup buttermilk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • Butter for cooking

Instructions

  1. Divide the ground beef into 4 equal portions and roll them into loose balls.
  2. Heat a skillet or griddle over medium-high heat.
  3. Place the beef balls on the hot skillet and smash them down with a spatula until they are thin patties.
  4. Season with salt and pepper, and cook each side for about 2-3 minutes, until crispy and browned.
  5. Add a slice of cheddar cheese on top of each patty and let it melt. Remove from heat and set aside.
  6. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  7. In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract.
  8. Gradually add the wet ingredients to the dry ingredients and mix until just combined (don’t overmix; a few lumps are okay).
  9. Heat a non-stick skillet over medium heat and lightly butter the surface.
  10. Pour about 1/4 cup of batter per pancake onto the skillet.
  11. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  12. Repeat until all the batter is used.
  13. Assemble the pancakes by placing a pancake on a plate, topping it with a burger patty, and your favorite toppings. Add another pancake on top.
  14. Serve as is or with a drizzle of syrup.

Notes

Use fresh ground beef for the best flavor and juiciness. Don’t overmix the batter; a few lumps are fine.
