Description

A warm and comforting vegetable soup that is easy to make and packed with nutrients.


Ingredients

Scale
  • 3 cups vegetable broth
  • 2 cups diced potatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup green beans, trimmed
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 bay leaf
  • Salt & pepper to taste
  • Optional: fresh thyme or parsley for garnish

Instructions

  1. Add all ingredients to a slow cooker (except herbs for garnish).
  2. Stir well, cover, and cook on low for 360 minutes or high for 240 minutes.
  3. Remove the bay leaf. Taste and adjust salt and pepper.
  4. Garnish with herbs and serve hot with bread or crackers.

Notes

Feel free to mix and match vegetables based on availability. For a thicker soup, blend part of it before serving. Add cooked pasta or rice in the last hour for a heartier dish.
