A warm and comforting vegetable soup that is easy to make and packed with nutrients.
Ingredients

- 3 cups vegetable broth
- 2 cups diced potatoes
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup green beans, trimmed
- 1 cup diced tomatoes (canned or fresh)
- 1/2 onion, diced
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 1 bay leaf
- Salt & pepper to taste
- Optional: fresh thyme or parsley for garnish
Instructions
- Add all ingredients to a slow cooker (except herbs for garnish).
- Stir well, cover, and cook on low for 360 minutes or high for 240 minutes.
- Remove the bay leaf. Taste and adjust salt and pepper.
- Garnish with herbs and serve hot with bread or crackers.
Notes
Feel free to mix and match vegetables based on availability. For a thicker soup, blend part of it before serving. Add cooked pasta or rice in the last hour for a heartier dish.
