Delicious and easy Slow Cooker Mediterranean Chicken featuring tender chicken thighs, vibrant tomatoes, and fragrant herbs.


Ingredients

  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp paprika
  • 2 lbs boneless, skinless chicken thighs (or breasts)
  • 1 can (14.5 oz) diced tomatoes, drained

Instructions

  1. Season chicken thighs or breasts with oregano, basil, and paprika.
  2. Place the seasoned chicken in the slow cooker.
  3. Add the drained diced tomatoes on top of the chicken.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Serve hot with your choice of sides.
