Description

A delicious and easy meal featuring tender chicken thighs infused with garlic and flavorful herbs, perfect for busy days.


Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1 tbsp cornstarch (optional, for thickening)
  • Fresh thyme sprigs (for garnish, optional)

Instructions

  1. Rub chicken thighs with olive oil. In a small bowl, mix garlic, thyme, rosemary, paprika, salt, and pepper. Rub the spice mixture evenly over the chicken.
  2. (Optional) In a skillet over medium heat, sear the chicken thighs for 2-3 minutes on each side until golden brown.
  3. Place the seared chicken in the slow cooker. Pour the chicken broth around the chicken (not directly on top).
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and fully cooked (internal temperature of 165°F/74°C).
  5. (Optional) For a thicker sauce, remove 1/4 cup of liquid from the slow cooker, mix with cornstarch, and return to the slow cooker, stirring well. Let it thicken for 5-10 minutes.
  6. Garnish with fresh thyme sprigs if desired, and serve.

Notes

Marinate the chicken for extra flavor and don’t skip the searing step for a nice golden color.
